It was a cool autumn day, perfect for piping hot squash soup, as my friends and I met for lunch at Brix in the Napa Valley. When my bowl of soup, looking like a work of art, was placed in front of me, I thought it was almost too pretty to eat. Almost. It tasted as divine as it looked, and I enjoyed every spoonful.

ReplyDeleteLooks delicious and the presentation is lovely. I've never had squash soup, but it sounds yummy. I am making vegetarian vegetable soup tomorrow. We are having cold and dark days here...perfect for soup.

squash soup....dont think i have ever had that....its really cool the little touches as well that make the food look as good as it tastes...
ReplyDeleteSquash Soup is so good. I could eat a whole pot all by myself. The owner of a Tea House who served it to us said the secret is to bake the squash in the oven first. It makes the squash taste different then when you just boil it. I have to say she was right because when I just boil the squash it never tastes as good. Plus you also leave the peeling on it when you bake it. You cut it in half, clean out the seeds, then put it on a cookie sheet with the cut side facing down then bake on a low temp in the oven until soft. Yes, I really do need to remember this.
